陳義傑,中共黨員,湖北省傑出青年基金獲得者,兼任湖北省食品科學技術學會副秘書長、湖北省衛生監督協會常務理事、湖北省首批中小微企業“科技副總”、湖北省科技特派員。主要研究方向為食品蛋白質化學與工程和食品合成生物學,主要圍繞食品蛋白/肽的物性和生物活性進行應用基礎研究,并以此進行新型功能蛋白/肽的合成與開發。近年來主持3項國家自然科學基金、國家科技支撐計劃子課題、湖北省傑出青年科學基金、教育部新教師基金,以及企業橫向課題等項目。參與湖北省技術創新計劃重大科技專項、湖北省自然科學基金創新群體等項目。參編《營養與代謝》教材,累計以第一/通訊作者在Food Hydrocolloids、Food Research International、Journal of Agricultural and Food Chemistry等食品領域TOP期刊雜志發表SCI科研論文20餘篇,轉讓專利1項。獲湖北省科技進步一等獎、教育部自然科學二等獎。

研究領域: 1.食品蛋白質化學與工程——通過生物與食品學科交叉,從蛋白數量、分子結構等多維度系統深入研究食品蛋白質物性的形成機制,以及其生物活性的分子機制。基于機制的理解,對食品蛋白/肽進行設計與改造,指導新型功能蛋白/肽的開發。 2.食品合成生物學——利用分子克隆、酶工程、底盤細胞分子改造等方法進行功能蛋白的高效生物合成與制備。 3.食品分子營養——通過蛋白質組、轉錄組、分子計算模拟等方法,深入研究功能因子的活性機制和食品滋味形成機制。
